INTRODUCTION

Peruvian cuisine is considered one of the most varied and richest in the world, and it is well known that Peruvian cuisine has already found a place among the most recognized in the world. Traditional Peruvian cuisine is a fusion of the cooking styles of the Spanish and the native Peruvians. Basic products like potatoes, corn, peanuts, *ají* (chili pepper), and fish and seafood from our sea date back to the Inca Empire, which flourished in the Andes for thousands of years. When the Spanish conquerors arrived in the 16th century, they brought with them European-style desserts and other ingredients like chicken, beef, and citrus fruits. Later came African, Italian, Chinese, and Japanese immigrants who helped create a flavorful cuisine that is still enjoyed in Peruvian homes and restaurants today.

Barrios Altos Lima, the cradle of *criollismo*, with its beautiful streets, balconies, and courtyards filled with the sounds of guitar and *cajón* (box drum), is the city where Mrs. Griselda was born and raised, inheriting in this way the secrets and the special touch in her kitchen.
